The places in which and/or around which Jonkaitis used to live are all in the SouthWest region of Lithuania. It is called Suvalkija, and this name comes from the placename Suwalki. Suwalki is a town in Poland. However, it used to be the center of Suwalki Region ("gubernya" in Russian) t the time when Lithuania was not independent yet (prior to the First World War), and the territory of Lithuania was divided into three "gubernyas": Vilnius (Vilna), Kaunas (Kovno) and Suvalkai (Suwalki). Lithuanians from Suwalki Region were first/early immigrants to the US. Since George is considered an early immigrant (coming here before 1900), he is likely to have been from that region. Also, many from that region were tailors (as opposed to immigrants from other places in Lithuania being farmers). Since George was a tailor, it is more likely that he was from that region.

Many Lithuanians whose last names started with "J" changed that "J" into "Y" because of the pronunciation. Many immigrants were illiterate, and when they told their names, Americans who were writing their names down, wrote them with the "Y" so it could be pronounced similarly to what they were hearing. So this way we now have all these variants: Yankaitis, Yonkaitis, Yonkites, etc.
First names on the other hand were just changed to their equivalents: Jurgis to George, Jonas to John, Juozas to Joseph, Povilas to Paul, Mykolas to Michael or Nickolas, etc.
